This pocket is designed to fit Benier Proofers made by Dutch company BENIER, its frame dimensions are 210 x 200 mm.
The pocket fits Benier Overhead Proofers: this is the larger model and has the dimensions 8-3/8*7-3/4*2-1/2″.
These proofers have trays with 12 pockets across.

Please double check the tray’s frame height: for this execution this must be 1-1/4″ (=30 mm).

Execution.
The pocket consists of a plastic frame and a polyethelene mesh.
The open mesh provides excellent air permeability around the dough.
The pockets’ design provides enhanced and superb cleaning results.

Available colors.
This Nylon Basket Pocket can be ordered in standard white frame, combined with white mesh.
Other options are a blue colored frame, combined with either white or blue mesh.

Metal Detectable.
In addition to the afore mentioned versions you can order the nylon basket with a blue colored, metal detectable frame.
This blue frame color can be combined with white or blue colored mesh.

Compound.
The compound developed for the production of the frame contains several additives that provide a durable pocket.
One of the additives is a UV Blocker, blocking the UV radiation from the UV-C lamps installed inside the proofer.
The UV Blocker delays the process of the resin becoming brittle over time, and extends the life time of the pockets’ frame.
Another additive ensures that the color remains as it is, it avoids the color from fading.

Cleaning.
The pockets can be easily cleaned with a simple, mild cleaner.
Our advice is to do this regularly and preventively.
A mild cleaner can simply loosen the dirt after which it can be rinsed off.
Clean the pocket before the contamination sits too long, it becomes too hard or had too much time to soak into the plastic.
In terms of a mild cleaner, we refer to a solution of green soap, or with the daily cleaner used in the kitchen.

Bringing the cleaning liquid up to temperature supports the effect of the cleaner liquids.
Note: the temperature may not exceed 55-60C because the mesh may shrink under the influence of too high temperatures.

The materials used for the frame and the inlay.

The frame
The raw material used for the pockets’ frame is a plastic developed specifically for its application: direct contact with moist and oil-film containing dough pieces.
The surface of the frame has a somewhat greasy feeling: this makes it difficult for dirt to adhere in everyday use.
Because it adheres less, any dirt can be easily removed during cleaning.
The resin is made with a standard UV stabilizer that makes it resistant to UV lamp radiation. An additional UV blocker improves the resin’s ability to resist UV radiation.
The entire additive package is stabilized by adding additional additives that, for example, prevent the white frame from yellowing after years of use. The UV stabilizer extends the life of the pocket by preventing the plastic from becoming brittle.

Available frame colors
The frame is available in white, blue, and yellow.
However, for orders of 500 or more, we manufacture the frame in any custom color.

Metal Detectable
The frames of all our large pockets are also available in a metal detectable version.
We offer this in two colors: BLUE and WHITE/GRAY.

Food-Grade Materials – FRAME
The frame material is always made of food-grade plastics, certified for direct contact with food.
This also applies to the mesh and felt used in our pockets and cups.

The Mesh Food-Grade Materials – MESH
The mesh we use for our pockets is always made of food-grade plastics, certified for direct contact with food.
This applies to both WHITE and BLUE mesh.

Which inlay types are available, where do they differ and what is their application

Our pockets come with different kind of inlays: various mesh types and felt:
Coarse Mesh type: codes 95020 (White) and 95021 (Blue).
Fine Mesh type: code T200. At this moment available in white only.
A mesh type between meshes 1. and 2: code T420. At this moment available in white only.
Needle Felt. Available in white color.

Ad 1. Open Mesh Code 95020 – WHITE.
All our larger sized pockets are executed with type 95020 mesh.
Due to the configuration of yarn diameter and mesh width, the mesh is fine enough to avoid the dough from sinking inside the maze during proofing time. At the same time the mazes are that wide that air circulation is optimised, and therefore provide perfect proofing conditions.

Type 95020 is our standard mesh type, executed in white color and is used in all our larger pockets.

Ad 1. 1. Open Mesh Code 95021 – BLUE.
In addition, we offer a Blue version of the type 95020 mesh.
In the unthinkable situation that fibers come loose from a broken yarn, a blue coloured fiber will be found more easily on the dough, rather than a white fiber, simply because no other ingredients in the bakery process are blue-colored.

Ad T200, T420 and Felt
These inlay materials are mainly used in our smaller pockets (or cups) that are mounted in Kaiser and other small bread intermediate provers.
Fully dependent on the type of dough and the proofing/resting time inside the pocket, you can choose from one of these mesh options.

Food Grade Materials:
All our pockets and cups are made from Food Grade material and are meant to come into direct contact with food stuffs.
Increased volume for extended proofing time In some cases you may want to extend proofing time. Longer proofing implicates an increased dough ball volume. The increased volume requires the pocket’s bowl to be larger as well.
For extended proofing times we offer all our larger pocket models in a “deeper mesh” execution.

Please contact us in case you have a requirement for a deepened-mesh pocket.

Benier Closures – What is this and what type of closures are available.

A closure or a snap-fit is the feature in the frame that connects two pockets.
The closure consists of a “hook” and “eye”.
In the market Benier proofers can be found with three different closures:

None closure:
the frame does not have a closure at all. Triangle shape closure: the original closure that has the shape of a triangle and is sharp and edgy.

Open T shape closures:
the closure has the shape of a T and has all rounded edges.

Closed T shape closure:
The Triangle and the open T closures allow you to push the “hook” through the open “eye”.
The “eye” of our proprietary Closed T shape catches the “hook” and ensures that the “hook” maintains in his seat in the “eye”, it can not be pushed through.
