Which inlay types are available, where do they differ and what is their application
Our pockets come with different kind of inlays: various mesh types and felt:
Coarse Mesh type: codes 95020 (White) and 95021 (Blue).
Fine Mesh type: code T200. At this moment available in white only.
A mesh type between meshes 1. and 2: code T420. At this moment available in white only.
Needle Felt. Available in white color.
Ad 1. Open Mesh Code 95020 – WHITE.
All our larger sized pockets are executed with type 95020 mesh.
Due to the configuration of yarn diameter and mesh width, the mesh is fine enough to avoid the dough from sinking inside the maze during proofing time. At the same time the mazes are that wide that air circulation is optimised, and therefore provide perfect proofing conditions.
Type 95020 is our standard mesh type, executed in white color and is used in all our larger pockets.
Ad 1. 1. Open Mesh Code 95021 – BLUE.
In addition, we offer a Blue version of the type 95020 mesh.
In the unthinkable situation that fibers come loose from a broken yarn, a blue coloured fiber will be found more easily on the dough, rather than a white fiber, simply because no other ingredients in the bakery process are blue-colored.
Ad T200, T420 and Felt
These inlay materials are mainly used in our smaller pockets (or cups) that are mounted in Kaiser and other small bread intermediate provers.
Fully dependent on the type of dough and the proofing/resting time inside the pocket, you can choose from one of these mesh options.
Food Grade Materials:
All our pockets and cups are made from Food Grade material and are meant to come into direct contact with food stuffs.
Increased volume for extended proofing time In some cases you may want to extend proofing time. Longer proofing implicates an increased dough ball volume. The increased volume requires the pocket’s bowl to be larger as well.
For extended proofing times we offer all our larger pocket models in a “deeper mesh” execution.
